Project title: Bon Appétit

Project overview:
“Bon Appétit” was a school canteen set up, owned and run by Students of IGCSE Enterprise. The canteen aimed to provide the school community with nutritious and affordable food. Students were involved in every aspect of the process. This project was STUDENT CENTRED and teacher facilitated.
Essential question: What it takes to start a business?
Duration: 4 months

Assessment: The students will be assessed on their evaluation report submitted based on the guidelines given by CIE.
Process:
The project will be done in 4 phases
Phase 1: Market Research
Currently School has 4 service providers who serve the student during break time and lunch time. The school always promotes the idea of student lead, and sustained services that will provide healthy food options at reasonable process to all stakeholders.
The students will be divided into groups:
Group 1 will do a school wide survey to find out what food items would students and teachers prefer to be included in the school canteen menu.
Group 2 will talk with the current service providers and find out which items on the menu are hot favorite and their learning/ success/ struggles.
Each group will prepare and present their reports in the class.
Phase 2: Action Plan
In the second phase, the students will develop a business plan for both the business ventures.
Students will get to collaborate with a business expert who will guide them to prepare a business plan and a nutritionist who will guide them to prepare a healthy menu.
Students will then present their business plan to a panel which will include the school administrator, accounts officers, nutritionist, a cooking expert and a business expert who will help them fine tune the plan.
Phase 3: Implementation of the plan
Students will run their business ventures in the month of February 2013.
All students will undergo a small culinary course to understand the basics of cooking They will also learn the nuances of keeping the accounts from our accounts in charge.
Phase 4: Evaluation
Students will evaluate the success of how the project was implemented and the outcome of the project
They will write an evaluation including:
(a) Evaluation of the financial success of the project
(b) An evaluation of the marketing communication(s) used,
(c) An evaluation of the internal communications used during the planning and implementation of
the project, and
(d) An evaluation of the planning and implementation of the project, with clear and reasoned
recommendations for improvement

- Design processes:
Students researched healthy food products for inclusion on the menu of the
canteen. Students trialled recipes, calculated the potential cost of products and determined the amount of time required to prepare the product. Facilities were analysed to ensure that production was manageable. - Local business research :
Students explored the options available with the our school service providers and local food retail outlets and researched the types of foods purchased by students and other staff members. Students evaluated the nutritional qualities of available food products. - Involving community:
Students gave a presentation to teachers, students and community members to advocate the addition of new products to the canteen menu.
Through surveys and interviews, the project responded directly to the needs
and preferences of students. Students justified the inclusion of new food
products on canteen menus and, they designed and produced posters to market
the menu.

The Project: Bon Appetit was an excellent opportunity for me and our students in terms of demonstrating and executing the key Mathematical skills and operations like Estimation, Profit and Loss, Ratio and Proportion in the best possible manner and its real practice. It was engaging for all the students, and made students realise, experience of applying their learning to the real-life situations. Also it made the students practice skills like time management, collaboration and communication. They became more responsible and creative with a professional approach.
The project not only provided the 'healthy food' for the body, but also for the students' mind.

Student's Reflection:
"For our enterprise group project component, we planned a canteen business in our school entirely run by us for a week’s time. Nobody had extensive experience in how to start a business, let alone run it. It was a challenge for us but a challenge we successfully surmounted. With great help from our teacher, we got an opportunity to practice our skills and also develop a few along the way. It wasn’t a very big business but nevertheless required paying attention to a lot of details and covering all corners. We learned to function effectively as a team. We also got quite a few chances to communicate with people regarding different things like bargaining with vegetable vendors for our ingredients, convincing our mothers and teachers to help us with the cooking and most importantly, with the many customers who most of the times crowded at the counters and had to be told to wait. We also used our creative side to come up with posters and banners for advertisement purposes. Like I said, it was just like an actual business. We also faced criticism regarding our small venture and competition from the other two canteens that were already established in our school. Criticism is healthy and some of it did point out loop holes which we took care of. Competition is good for business. We came up with different food items and made it sure that everyone was aware of it through our posters and banners, we created an appropriate ambiance and thus, handled the competition. In all, we faced challenges that we overcame, we gained more perspective regarding businesses
and we had a lot of fun throughout."

Bon Appetit" was a school canteen project that we set up as part of our Enterprise Group Project Assignment. On the whole, the group project taught me personally, and all of us to learn how to run an enterprise efficiently, and most importantly, do that from scratch. As we had to do everything ourselves from basic planning, to surveying to implementation and execution, it gave me a unique experience. I believe that the most essential quality that I got a chance to work upon was teamwork. We had a very active team and that made me even more encouraged to put my best in the project. Our canteen though ran for only a week, helped me gain lot many skills as I had to negotiate, talk to several people and also plan according to changing situations. I throughly enjoyed throughout the whole process, and would still want to work further to make it even better.

From the student volunteer:
Bon Appétit!”, the school canteen project organized by the Enterprise students was a real venture & exposure to experience business in the real world. Being a Business Studies student, I can say that it is essential to be able to implement the knowledge when actually conducting commerce. The project had been a challenge for the students, but they handled it excellently. I was a volunteer for their business set-up and enjoyed providing a helping hand.
The planning & extensive research carried out before the set-up seemed very efficient & was reflected in their outcome. Maybe the young entrepreneurs lacked a little in the field of management. Making the dishes early morning, going to the market in the evening, handling the bills, etc. was a tough business with a small team.
As a customer of the enterprise, the food stall was a fascination. The taste of the food was outstanding and on the other hand the food quality also excelled. By introducing deserts in the school canteen, the stall had become a major attraction.
Overall the project was a great idea, executed fantastically& a learning experience. Great effort!
